Sustainable Locally-Sourced dining options at Mount Rushmore
Mount Rushmore National Memorial embraces a holistic approach to its food and beverage program named Fresh Forward. Our program provides guests with sustainable and healthy choices while delivering great taste. For healthy and sustainable food and beverage offerings, Fresh Forward considers the types of products offered, agricultural methods, processing, packaging, and transportation, as well as the manner in which we prepare, serve and present to our guests. The program emphasizes several specific elements under the following six-stage strategy and framework:

- Community Partnerships
- Monitoring & Improvement
One of our specific initiatives is encouraging our guests to “Choose to be Straw Free.” Over 500 million straws are used daily in the United States ending up in landfills for generations or worse: on the ground, in streams, and in oceans. Join us and leave a Softer Footprint – one straw at a time.
In 2019 Carver’s Cafe was certified as a 4-Star Green Restaurant by the Green Restaurant Association (GRA). This is a recognition of achievements in categories such as sourcing sustainable food, conserving water and energy, minimizing chemical pollution, and reducing waste through recycling. The GRA is a national nonprofit organization helping restaurants to become more environmentally sustainable. Carvers’ Café is the first 4-star Certified Green Restaurant ® in South Dakota, the second in the national park system, and the 33rd in the country.
