Carvers Café is the only Certified Three Star Green Restaurant in South Dakota.
Awarded by the Green Restaurant Association, restaurants achieving the 3-Star Green Restaurant Certification must earn points in a variety of categories including water efficiency, waste reduction and recycling, sustainable furnishings and building materials, sustainable food, energy, disposables and chemical and pollution reduction.
To receive this certification, dining facilities must score 100 points. The Carvers Café received 216.61 points. Certified restaurants mush show continual improvement and receive additional points each year to maintain their status.
We pride itself in serving healthy, local, and sustainable cuisine. In recent years, we’ve has implemented several successful sustainability programs. For example, we grow our own vegetables in a Keystone, S.D. garden maintained by employees and serve them in the employee dining room as well as the restaurant. We purchase ingredients from local and sustainable sources, and have dramatically reduced our energy needs by changing to LED lighting, installing low-flow water faucets and implementing recycling and composting programs.
While all types of foods are available at Carvers Café, Buffalo or the American Bison, is prominently featured. This remarkable animal was an essential component of the lives of indigenous people. The herds of buffalo on the Great Plains supplied clothing, housing, medicine as well as food to the First Americans. Xanterra takes great pride in serving locally produced buffalo that are nutritious, healthy, and sustainably harvested.
